This recipe literally came out of nowhere. My girlfriend was over having coffee and and she was trying the apple pie pancakes that I posted awhile back and somehow we started talking about appetizers and what she should make for an upcoming party. Then these zucchini bites popped into my head so while she was sipping her coffee I jumped up and made these to see what would happen. They smelled so yummy coming out of the oven that it even drew the kids out of their rooms. They all came down and my plate of zucchini bites were gone. I looked at her and said I think that this one is blog worthy 🙂 Since then she has made it numerous times for guests and so have I. I think you will like this one and it is easy. 1 bowl throw everything in and mix. My kind of recipe. In fact, we are having a huge 4th of July party in our neighborhood and I am making a whole lotta of these for my awesome neighbors and friends. My husband and his friend have decided to put on a massive fireworks show for everyone. I normally hate spending money on fireworks cause you know, it is literally just burning money! BUT my husband was so excited and said this was for all the kids. He knows that tugs on my heart because my kiddos do have some fantastic friends so I decided not to be the grumpy one and just go with it this year. I don’t know whether my husband is excited to see the kids faces when he launches them over the lake or if he is just excited to blow things up?? Yeah I think you are right he is just excited to blow things up! haha
1 cup shredded zucchini (chopped into small pieces)
1/4 cup chopped chives
1/2 cup cheese (If you are dairy free 1.5 tablespoons of nutritional yeast is awesome also)
1/2 cup almond flour
1/4 teaspoon of salt, pepper, and smoked paprika
Combine it all together and make into bite size pieces. Bake at 425 for 15 minutes
