Daily Food

I get asked a lot about my what I eat.  When people hear Paleo they think I eat all sorts of crazy stuff or I am in the kitchen all day.  Once they find out I like to blog about food, then they think every meal I serve is a gourmet meal.  This couldn’t be further from the truth.  Most days we eat pretty simple in my house.  My family gets excited when I try out a new recipes because I am famous for Taco Tuesday and lots of rotisserie chicken on our busy nights.  I am a veggie pusher in my house though.  My kids have learned to deal with it as long as there is a small dessert at the end of the meal,  they can power through.  I don’t blame them, I would too but I prefer not to have a big butt so I don’t practice this, sorry just keeping it real! HA! I have said this many times before, I want to fuel my body so if performs to the max.  Meaning I don’t want to be tired, sluggish, and that awful feeling you get when you eat bad and then feel bad about yourself.  I used to have “cheat” days where I would be so good and then eat like crap all day long for 1 day.  At the end of the day I felt so sick and it took me a few days just to recover from the junk.  I have learned moderation and allow myself a small treat every day so the cravings stay at bay.  I joke around all the time and say that there is a non healthy Kelly that lives inside me and every once in a while she likes to knock at the door and come out with a vengeance.  But if I feed the inner beast with a little sugar I can usually keep her locked away! Sad but true.  So here is a day in the life of what I eat to keep myself feeling full and having lots of energy.  I have had this breakfast every day for the past 4 years.  I know so boring but I don’t seem to get tired of it.  It has the right amount of fat and protein for me to keep me full and going for hours.

10 cherry tomatoes, 1/4 of an avocado, 1 egg, and 2 slices of bacon (this is a half cooked bacon from Trader Joes that equals about 66 calories for both pieces). I usually throw some type of general seasoning down on top of everything













This keeps me full til lunch.  I try to make lunch my biggest meal.  I find when I go to light on  lunch I am hungry late afternoon and then I want to snack and then you end up eating empty calories and that never put me in a good mood! So here are some typical lunches for me:

I won’t make excuses this is a huge salad and I eat every bite!! I have spinach, sunflower, pea, and broccoli sprouts as the base. I have shredded zucchini, carrots, cucumbers and a few cashews sprinkled in there with a pile of rotisserie chicken on top. I top it with my favorite balsamic dressing (recipe on the blog)

This is leftover heaven. I made my paleo fried rice with chicken and then added some cashew cream cheese to turn it into a creamy dish. I had to fight my husband for this one, he wanted my bowl!













Then it is my most favorite time of the day!! Whoop Whoop! Chocolate time!!! After all those veggies I won’t feel so bad.  I personally think chocolate should be its’ own food group.  Anyone else on that train? Ok truth be told, I don’t go that crazy but I do eat a small square of chocolate.  I make that puppy last and just don’t pop it in my mouth.  I make sure the old noggin recognizes the chocolate thing going on so I don’t go crazy.  Here are my favorite chocolate bars and what my friends say as “Kelly” approved


Now I do some prep work on the weekends for my go to salad and dinner meals.  I usually shred several zucchinis, chop several carrots and cucumbers.  Or whatever veggies I want that week.  Makes for quick dinners and quick lunches.  And if I chop veggies small my kids will eat a lot and not think twice so its a win for everyone.  No stomping your feet at the dinner table demanding children to finish what is good for them.  Yes I have been known to throw a few adult tantrums in my day.  Still keeping it real!

My workout schedule is a little wacky. It depending on when my husband is traveling, if we have morning sports, etc so lately I seem to get my workout in after lunch and afternoon coffee time (which is extremely important for my afternoon happiness)! So once I workout I like to have a protein packed snack that will carry me over to dinner.


I buy this organic, grassfed cottage cheese at whole foods. 1/2 cup has 19 grams of protein and 150 calories. I throw a small banana and about 1/4 cup of blueberries and this keeps me going til dinner













I will admit dinner in my house is usually easy and quick.  I usually save my recipe testing for the nights we don’t have sports, which is 2 days a week.  Obviously not a whole lot of time.  I like to cook things that I know I can make a few meals.  Meatballs is a great one.  One night it can be Italian, one night plain, one might meatball “sandwiches”, casseroles, and the list is endless.  This night I just chose plain with tomato sauce with roasted veggies

If you just brown some turkey/hamburger meat that also can make a bunch of different meals.  Tacos, burritos, spaghetti, casseroles, or just plain the way I will do it.  Here is another dinner I made for myself the next day with some of those same roasted veggies and this time I drizzled with a balsamic Italian sauce that I had made.

See nothing fancy or time consuming but I get the veggies, fat, and protein I need to keep me full and not sneaking my kids ice cream or anything other desserts we might have in the house.  When you are a blogger and most people seem to love desserts you are always recipe testings so we always have something sweet I have made!

So my favorite to go snacks at the moment are these, I usually have one of these snacks everyday just depends on what my tummy is in the mood for or how hard of a workout I had that day:


If you look in my purse I have all of these at all times except the chips cause that would be too messy! 🙂 We are out and about a lot and it never fails someone is always hungry so this keeps us all happy until we can get home and no one has to die from starvation. (inset sarcasm) Every brand of these have different flavors, this is just the kick everyone is on right now














So there you have it folks, a day in the life of my food. I don’t count calories but I can pronounce all my food and the ingredients.  I eat a lot and stayed fueled.  I don’t go hungry and personally that is best for anyone that is around me, a hungry Kelly is a angry Kelly.  Just ask my dear husband if you don’t believe me 🙂
