Sweet, Tangy Meatballs

Nothing like teamwork at its finest.  I was hosting a homeschool play date at my house, AKA mom’s get to chill, drink coffee, eat chocolate while the kids entertain themselves.  Let’s just be honest.  Sometimes it is nice to be with your homeschool tribe that can relate to the days where you think it would be easier to poke your eye out then it would be to homeschool your children.  Yes I was having one of them days.  Nothing like a little girl chat, cooking, and chocolate cupcake testing to turn the day around. (I have a new chocolate cupcake mix coming soon) I was feeling so much better and I had been playing around with a crockpot meatball recipe in my head so I decided to have these girls sample the sauce as I went.  One of my friends is Miss Picky Pants, I constantly shake my head and giggle at what little she will eat and try.  I got her to eat a strawberry at my house for the first time, true story, no joke! So I knew if she approved the sauce, 99% of you would also like it. Haha! She and another friend gave some great suggestions and voila we have the best sauce for crock pot meatballs.  Teamwork my friends! We inhaled this dish, my only mistake was only making 1 pound of meatballs.  Next time I will do 2 pounds of meat so we have leftovers.

½ cup BBQ sauce (this is not a sweet sauce)

¼ cup All Fruit Jelly

3 tablespoons honey

1 tablespoon Dijon mustard

4 garlic cloves

1/3 cup spring onions

1 pound of meat

3 tablespoons arrowroot flour

½ teaspoon salt

½ teaspoon smoked paprika

¼ teaspoon pepper

1 egg

Combine all the sauce ingredients together and set aside.

Combine the meatball ingredients and made golf ball size meatballs and bake at 350 degrees for 20 minutes.  Place meatballs in the crockpot and pour the sauce over the meatballs and cook on low for 2-4 hours.  Stir meatballs half way through the cooking time.
