So I was scrolling through Facebook when this yummy picture caught my eye. I clicked on the link and then quickly realized it wasn’t something that I would ever make but loved the idea. Then I got to thinking….. I could probably clean this up and add a bunch of nutritional ingredients so I wouldn’t feel so bad giving it to my kids, who am I kidding?? So I could have a few bites myself without feeling guilty! These do contain oats, these oats are gluten free but not Paleo. My kids are not Paleo and a few bites for me is not going to kill me so this is a perfect after lunch treat, a pinch with your morning coffee or afternoon coffee, great pre-workout or post workout. So any excuse to have a small square cause they are really good. 🙂 All joking aside I think I ate one. I have these little hands in my house that like to get into my treats. I recently made another batch thinking this time I would eat a few and the neighborhood kids came over and then they were gone. I guess I saved myself some calories, right?? The point…these are delicious, go try them and tell me what you think about this version!
2 cups gluten free oats
2 tablespoons chia seeds
2 tablespoons flax seeds
1/4 teaspoon Himalayan salt
1/4 cup ghee (or butter)
1/3 cup coconut oil
1/2 cup coconut sugar
1/3 cup almond butter
3/4 cup chocolate chips
In a saucepan combine ghee (butter), coconut oil, coconut sugar, and salt. Heat on low-medium heat until the mixture is melted and combined (coconut sugar might not incorporate all the way but will mix well later).
Add the oats, salt, flax and chia seeds to the pot and stir for about 4-5 minutes. Make sure you watch cause you don’t want to burn your oats. I stirred them a lot.
Melt the chocolate and almond butter in the microwave stirring every 20 second until you have a smooth mixture. You can also do this in a double broiler.
Line a 8X8 pan with parchment paper and spread HALF of the oat mixture into the pan. Press down with your spoon to pack down the mixture.
Pour chocolate mixture over the packed oats. Then pour the other half of the oat mixture over the chocolate. Press down lightly to just set the oats into the chocolate. Put in the fridge to let the chocolate harden up. This is a few hours. I know such torture but I promise the wait is worth it.
I slice into small squares and store them in the fridge.
