Oh goodness this marinade is a good one. When I have people over even if I plan something simple it just seems to take me awhile to pull everything together. My husband had invited some friends over to the house and said the famous last words “just keep it simple, no stress”. I usually laugh and say “Have you met me??” This is how I show love, I cook for those that I like. It is always a joke that if I have ordered pizza and serve you box wine, good chances are I don’t really like you. hahaha So the whole comment of keeping it simple is just silly, I like to fuss over my guests. I have served it at three different parties and every time it was a hit. I have served them as kabobs and just as chicken breasts. This chicken is so moist and flavorful, it won’t disappoint. I added a little dipping sauce with some of the marinade that was just oh so yummy and was a hit with big and little kids. This is a perfect spring/summertime BBQ dish!
LIME, HONEY CHICKEN
1 -2 pounds chicken
1 large lime juiced (2 small limes)
1 lime zested
1/4 cup mayo
1/4 cup honey
1/4 cup fresh parsley
3 garlic cloves
1/4 teaspoon salt
1/4 teaspoon pepper
Salt and pepper your chicken (this does NOT include what is in the marinade). Remember you need to season every “layer”
Place all ingredients into a glass jar and shake well! Make sure all the honey is mixed. Place chicken in a plastic bag and pour marinade over the chicken (reserve some if you would like a dipping sauce)
I like to marinate this for at least 4 hours. The longer the better.
If you would like to make the dipping sauce, reserve a few tablespoons and mix with sour cream to drizzle down on top. There really was no measurement for this. I took a 2 big spoonfuls of sour cream and then thinned it out with some marinade and taste tested as I went. Pure science with that move! haha
